I created this recipe because I love me some sea food and I wanted to try something different. The first time I made it, it was an experiment and I thought it would be wise to try it again before sharing the recipe just to confirm it was not a one-time victory. I definitely tweaked a few things the second time but it still turned out beatiful and tasty.
The sea food balls has a lovely crunch on the outside which gives way to the sweet mushy goodness of the sea food within it. So without further ado, let us jump right into it people.
Ingredients (Made 18 balls)
For the filling
- Prawns
- Mackerel
- Pink salmon
- Carrots (washed and grated)
- Red bell pepper
- Spring onions
- 4 small potatoes (boiled)
- 2 tbsp of Milk
- 1 Egg
- Seasoning: Sea salt, ground ginger, cayenne pepper, ground white pepper, onion granules
- Vegetable oil for frying
For the coating
- 2 tbsp of Greek yoghurt
- 2 tbsp of Milk
- 2 Eggs
- I cup of Flour (season with seasoning listed above)
- 1 cup of breadcrumbs
Tools used
- 2 medium sized bowls
- 2 small bowls
- A fork
- A whisk
- A big frying pan
Method
For the filling
- Chop or shred the sea food (prawns, mackerel and pink salmon) and place in a medium sized bowl. Ensure all the bone has been removed from the mackerel and salmon before doing this.
- Mash the boiled potatoes with a fork and add to the sea food mixture and mix.
- Add the carrots, spring onions and bell pepper and mix with a fork.
- Add milk, egg and seasoning and mix till the seasoning is evenly folded into the mixture.
- Roll up the mixture into small balls and place on a flat plate or tray.
For the coating
- Whisk the Greek yoghurt, milk and eggs together in a small bowl.
- Place seasoned flour in a medium sized bowl and the breadcrumbs in a separate bowl.
- Lightly coat the rolled up balls in the liquid mixture. Be careful not to let the balls get too soaked as they will come loose and fall apart.
- After coating with the liquid mixture, coat with the flour and then the breadcrumbs and place on a tray covered with some kitchen tissue or parchment paper.
- Once all your balls have been coated, they can be deep fried in vegetable oil under medium heat or baked in an oven at 180 degrees celcius.
- Bake or fry until the balls are golden brown on both sides and serve while hot.
